i had encountered this problem when helping a colleague to update her iPhone firmware. searched for solutions online.. tried most of them, some of the solutions were too lengthy, but most importantly none of them fixed my problem. accidentally found this fix while trying my luck. learned much from the web, so i thought i could contribute back in a small way.
specs at time of issue:
OS: Win 7 Pro 32bit
iTunes: 10
iPhone OS: 2.2.1 -> 4.1
iPhone: 3G
now for the 10 sec fix as promised:
like many others, i am still facing the issue of iPodService.exe crashing on Windows XP, iTunes 10. so i would advise users to avoid updating to iTunes 10 at the moment. the new iTunes logo and color theme sucks anyway :/

- simply open up the Task Manager (hold Ctrl + Shift + Esc or Ctrl + Alt + Del)
- under Processes tab -> select AppleMobileBackup.exe -> End Process
